Vegetarian recipe using cider?
Someone gave me a litre of Cornish cider as a gift. I’m not a big fan, so don’t really want to drink it, but think that it would be nice to cook with. Does anyone have a nice veggie recipe for cider?
Cook a mix of swedes, turnips, carrots, parsnips and potato’s in it then mash up with a couple of knobs of butter, season with salt and pepper, and my friends from Liverpool flipped when I did that with cider and add a handful of brown sugar and few rasps of nutmeg, they had never seen sugar in swedes before, here in Canada ours grow so large or bigger that a bit of sweetness is necessary to tone down the wild taste, even do the mix, and put in a casserole and bake it in the oven to brown it like a mashed potato bake.
