Yummy vegetarian recipes, preferably with vegetables?


I just went shopping and got a bunch of stuff such as beans, red bell peppers, butternut squash, and zucchini.

Anyone have any yummy recipes with vegetables and such? I was thinking maybe a sauce because I got tortellini as well.

Garlicky Tortellini & Vegetables Primavera

Ingredients:
12 small cloves garlic, peeled but left whole
1/4 cup extra-virgin olive oil
1 pound zucchini, ends removed quartered and cut on the diagonal into 1/2 inch pieces
5 carrots, peeled and cut on the diagonal into 1/2 inch pieces
2 very thin lemon zest, each about 1 1/2 inches long and 3/4 inch wide
1/2 cup water
1 cup shelled English peas (about 1 pound unshelled)
1/2 cup torn fresh basil leaves
Finely ground sea salt, preferably gray salt
Freshly ground black pepper

Directions:

Start by cooking your tortellini. While it is cooking work with your veggies:

In a skillet, combine the garlic and olive oil and place over high heat. When the oil is hot but not smoking, tilt the pan to collect the oil and garlic on one side. When the garlic begins to brown, after 3 to 4 minutes, set the skillet flat on the heat and add the zucchini, carrots, lemon zest strips, and water. simmer until the vegetables are tender, 5 to 7 minutes.
Add the peas, tortellini and basil and saute until the peas are just tender, about 2 minutes. Season to taste with salt and pepper and stir to mix well. Serve warm.
