My soup is a tad bitter. What to do?
Last week, I followed a recipe and made a great kabocha squash soup with roasted turnips, celery root, onions and leeks. Added lemon juice and maple syrup and it was great.
This week, I liked the idea of a root vegetable soup. I baked a couple squashes and roasted rutabagas, turnips, parsnips, carrots and beets. I sauteed the onions and leeks, added the cooked squash and simmered another 30 minutes with some diced garlic thrown in.
The soup is a bit bitter. What can I add to de-bitter it? I’d like to keep some of it vegetarian but I’m not adverse to adding some meat (sausage??) to the other half.
Add sugar or honey.
