Preferably quick & easy please.

Leek and Potato Soup

Potatoes make a great base for soups since they boil down to make a thick and creamy consistency. Add a handful of chopped leeks, and a sprinkling of herbs and seasoning and you’ve got a simple, quick to make “old favourite”.

Ingredients
1 tsp Olive Oil
1 Small Onion, Chopped
450g Leeks, Sliced
450g Potatoes, Diced
500ml Semi Skimmed Milk
500ml Water
1 tsp Herb Cubes
Method
Heat the oil and gently fry the onion leeks and potatoes for 3 minutes

Pour in the milk and 500ml water, add the herbs and season with salt and pepper.

Bring to the boil, cover and simmer gently for 20 minutes.

Strain the vegetables, reserving the liquid in a jug.

Blend or liquidise the vegetables, then blend in the liquid.

Reheat gently, adjust seasoning and serve.

Ginger Carrot Soup
Bright, colourful and warming. This ginger carrot soup recipe is particularly low in fat and calories – under 80 kcal per serving – which means you can enjoy it with a lovely chunk of wholemeal bread! (4.7g fat, 79 kcal per serving).

Ingredients
1 tbsp Olive Oil
1 Medium Onion
6 Large Carrots
10g Root Ginger
1 Vegetable Stock Cube
1½ Pints Boiling Water
1 tbsp Basil
1 tsp Black Pepper, Freshly Ground
1 tsp Sea Salt
Method
Heat oil in a large pan. Add in onion, carrot & ginger. Let cook for 5 minutes to soften the onion.

Mix up vegetable stock using water and stock cube. Add to pan and bring to the boil. Cover saucepan and let simmer for 35 minutes so that your carrots are nice and soft.

Pour contents of pan, along with salt & pepper, into food processor and blend, adding more water if needed.

Garnish with basil and serve.

Chicken Noodle Soup
Noodles in soup is one of the favourites. They’re so simple to add, but make our classic chicken soup so much more interesting! (1.7g fat, 130 kcal per serving).

Nutrition Information Per Serving
| 130 calories
| 1.7g fat | 16.2g protein
| 11.6g carb | 1.2g fibre

Ingredients
2 Chicken Stock Cubes
2 Pints Boiling Water
4 Small Skinless Chicken Breasts, Diced
1 Medium Onion, Sliced
10g Parsley
1 tsp Black Pepper, Freshly Ground
1 tsp Salt
85g Frozen Peas
150g Noodles, Egg, Thread
Method
Make up the stock by crumbling the stock cubes into the boiling water and stirring well. Put into a large pan and add the chicken, onion and seasonings. Bring to the boil, reduce heat, and simmer for 30-35 minutes (or until chicken pieces are tender).

Add the peas to the pan and simmer for a further 10 minutes.

At the same time, cook the noodles as per the instructions on the packet.

Stir the noodles into the soup and serve.
