Here is a recipe for Tomato Basil Rotini with Chicken Breast that is a good pasta recipe for diabetics. This recipe uses healthy whole-wheat pasta and adds sliced chicken breast. TOMATO BASIL ROTINI WITH CHICKEN BREAST
12 oz pkg whole-wheat rotini
2 cups chopped plum tomatoes
1 1/4 cups sugar-free pasta sauce
1 tbsp basil
1 tbsp olive oil
1 clove garlic, minced OR 1 tsp garlic powder
1 cup crumbled feta cheese
1 lb boneless skinless chicken breast
Cook pasta according to package directions and drain. While pasta cooks, grill or saute chicken breasts until no longer pink in the center. When thoroughly cooked, slice into strips. In a large mixing bowl, combine tomatoes, sauce, basil, olive oil, and garlic. Add cooked pasta and toss to combine. Top with the chicken strips. Sprinkle cheese over the top. Serve warm.
GARLICKY SPINACH SALAD
1 lb fresh spinach
2 fresh tomatoes, sliced
6 scallions, trimmed and thinly sliced
5 tbsp plain nonfat yogurt
2 tbsp extra-virgin olive oil
2 garlic cloves, minced
1/2 tsp dried thyme
Fresh ground black pepper
Wash spinach, remove stems and dry. Tear into pieces and place in salad bowl. Add tomatoes and scallions and use hands to combine with spinach. In a small mixing bowl, combine yogurt, oil, garlic, thyme and pepper. Add dressing mixture to the spinach mixture and mix well.

how can i make this recipe healthier?
RECIPE INGREDIENTS:
One half of a 12-ounce box of jumbo pasta shells (about 18 shells)
1 teaspoon salt
1 (15-ounce) container ricotta cheese
2 large eggs
1 cup grated parmesan cheese
2 cups grated mozzarella cheese
2 tablespoon chopped fresh parsley or mint (or 2 teaspoons dried)
1 (26-ounce) jar Italian pasta sauce
i want to make stuffed shells for my family… but all the cheese does not seem very healthy. is there any thing i can do to this recipe to make it healthier?
Use egg substitutes instead of the eggs. Use low fat cheeses but leave 1 of the cheeses a full fat cheese. If you use all low fat, it’s not going to taste as good. The Parm is a fairly low fat cheese and truthfully, I’ve never seen that in a low fat so I’d leave that alone. You won’t notice if the ricotta or the mozzarella are low fat in the finished dish.
And you certainly could make your own sauce; less chemicals, add more veggies and less sweeteners. Think about adding cooked and well drained (or frozen, thawed and squeezed dry) spinach to your ricotta filling also. Just kick up the salt & pepper a little to season the spinach otherwise the filling will be bland/flat. You then have shells florentine!
Since you’re doing meatless; think about the overall picture of the entire meal. No meat, a lot less fat so you can get away with the fat in the cheeses a bit. Add a big salad full off healthy veggies and overall, you have a lower fat meal. We sometimes get so fixated on one item in a meal we forget to look at the whole picture.
