Ingredients:

Almonds
Pecans
Pumpkin seeds
Sunflower Seeds
Unsweetened carob chips
Unsweetened, shaved coconut
Mix all together, toss in a baggy and you have a great energy-boosting snack for the car, after a workout or at your desk in the office.

Cheese Crackers and Veggies
Ingredients:

Any Shredded Cheese (cheddar is a great choice)

Sliced Veggies (celery, peppers, cucumbers, cauliflower, etc.)

Place small mounds of shredded cheese in a hot skillet and fry until browned and crisp. Remove the cheese and place on a paper towel lined plate to absorb excess oil. Allow to cool and the cheese will become crisp and an ideal substitute for traditional crackers or chips.

Does anyone know healthy (yet satisfying) dessert recipes?


I really love fruit, and I do so much to it to make it taste like a different dessert. I make grilled fruit kabobs, fruit and yogurt parfaits, fruit salads, Jello with fruit in it…but now I want something really different! I’m open to any suggestions, but I really want to have something sweet and low-fat and low-calorie (and low-sugar if possible). I know it sounds like I’m putting up some pretty strict guidelines, but I’m very open!

Mmmmmm, yes! I love light deserts, they are so good! Here are some of my favorites.

Strawberry Citrus Sorbet

Its far from sugar free, but with only 74 calories per serving and zero grams of fat, its worth it. This desert is great for hot summer nights.
Serves 4
2/3 cup sugar
3/4 cup sliced strawberries
1/2 cup orange juice
1/2 teaspoon grated orange peel

1. Combine the sugar in a saucepan with 1 cup of water and bring to a boil over medium heat, stirring until all sugar is dissolved and a simple syrup forms. Chill for 1 hour.
2. In a blender, puree the strawberries, orange juice, and orange peel until smooth. Gradually add the chilled syrup and blend well.
3. Pour the mixture into a glass dish and cover. Freeze for about 3 hours, stirring every 30 minutes. Blend again until smooth.
4. Serve immediately or cover and freeze for up to 3 days.
No Ice Cream Maker?
Here’s the low-tech way to churn out great sorbet. Place the fruit mixtures in a stainless steel or glass dish and put them in the freezer. When the mixture begins to harden — about 30 minutes — take it out and stir it till it’s silky. Repeat several times, and voilá! Delicious hand-made sorbet.

Cupcakes
Makes 24
Moist, rich, fluffy, and delicious cupcakes. With only 15 calories from fat per serving? Yup. These are my favorite light desert recipe that will have you asking for more.

1 Duncan Hines Yellow Cake Mix
1 1/4 cup of water
1/2 cup of applesauce
4 egg whites
1 pinch cinnamon

Pour out the cake mix. DO NOT FOLLOW THE DIRECTIONS ON THE BOX! Pour in the water and applesauce. Blend with the mix. In a separate bowl, beat egg whites until stiff peaks form. Stir in with the rest of the ingredients, along with cinnamon. Bake at 350 degrees for 17 minutes. Enjoy!
Calories: 90 per cupcake

Angel Food
Servings: 16
Serve this with fat free frozen yogurt and fresh strawberries. Yum!
INGREDIENTS
1 1/4 cups cake flour
1 3/4 cups white sugar
1/4 teaspoon salt
1 1/2 cups egg whites
1 teaspoon cream of tartar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
DIRECTIONS
Beat egg whites until they form stiff peaks, and then add cream of tartar, vanilla extract, and almond extract.
Sift together flour, sugar, and salt. Repeat five times.
Gently combine the egg whites with the dry ingredients, and then pour into an ungreased 10 inch tube pan.
Place cake pan in a cold oven. Turn the oven on; set it to 325 degrees F (165 degrees C). Cook for about one hour, or until cake is golden brown.
Invert cake, and allow it to cool in the pan. When thoroughly cooled, remove from pan.
