healthy recipes meatloaf
Anyone have any good “picky-eater” recipes?
My boyfriend is a very picky eater and mostly only likes beef and chicken. I’m looking for some recipes to make for him. The only vegetables he’ll touch are potatoes, corn, and a tiny bit of steamed broccoli. I would like to cook healthy meals that he will still like. So far, his favorite meals are meatloaf and hamburg gravy – not very healthy or exciting.
My boyfriend is the same! It seems the only food he eats is Cheese.
With Chicken:
Bake boneless Breasts in Italian Dressing. I call my dad everytime to ask how long… It usually takes 30-40 minutes. You get great flavor if you soak it over night.
I usually dump the entire bottle in a casserole dish… When it’s done cooking, put it on a baking sheet with a slice of cheese (he likes provolone, I like Pep. Jack, cheese is cheese) and put it back in the oven until it melts.
Sometimes we put bacon under the cheese- mmmm. Infact, if you coat it with Honey Mustard (i use BBQ) sauce, then bacon, then Cheese you have exactly what the outback Steakhouse calls, “Alice Springs Chicken,” or what Chili’s calls, “Monterey Chicken.”
Potatoes:
Cut up 2 or 3 baking potatoes- Skin on or off, it doesn’t matter. Skin on keeps the end product from looking like mush…. Put them in a small baking pan- scoop like, 2 table spoons of butter/marg. on top- and cover the whole thing with a packet of Knorrs Onion Soup Mix. -This isn’t great if you’re looking for healthy options but Its a crowd favorite- Best thing is, throw the whole thing in some alluminum foil and you can cook them on a grill…. The longer you bake them the better- I suggest nothing less than 45min.
Best of Both: Cheesy Cornflake Hashbrowns (Break/lunch/dinner)
1 bag frozen cubed hasahbrowns
2 cans cream of chicken soup
sour cream (optional)
CHEESE!
Cornflakes
GREAT for thanksgiving! Throw the hashbrowns in a baking dish- mix in the cans of soup and sour cream if you like it- (i use the smallest tub) Cover with CHEESE! I use Shredded Amer. Cheese- a whole bag- 2 cups. (I dont cook organic) Top the whole thing with cornflakes, spray on some I can’t believe it’s not Butter, (Otherwise the flakes tend to look burnt when they’re done, not cool) Bake for an hour- Another one that requires a trip to the gym, but again a crowd fav!
I know they’re not healthy, but you need greasy dishes too!
