healthy recipes stuffed mushrooms

Need healthy chicken recipe! (diet rules included) Please help!?
There are a LOT of rules to this diet I’m on (but the results are incredible). So I need a good chicken recipe for tomorrow night!
No cheese, potatoes or pastas can be used. (only whole wheat bread).
No salt/sugar and ONLY low sodium/carb products (obviously i can use low sodium ranch and stuff.)
No products high in either of those or in saturated fats! (no soy sauce, BBQ sauce, breadcrumbs, butter, etc.)
You can probably see why I am having such a hard time with this.
I CAN use peppers, mushrooms, onion, garlic cloves, cinnamon, most herbs, (pepper, clover, oregano, etc) brown rice, green beans, broccoli, cauliflower, and most other veggies (not corn/potatoes/beans), lemon, orange, and all other fruits.
I’m having a hard time coming up with dinners that aren’t bland and repetitive

Brown rice (I use Minute Rice) cook as directed( I use microwave) bag of mixed veggies your preference steamed. Heat skillet after rice is cooked put into skillet and add cooked veggies.Can you have egg? if so 1st cook egg 1 scrambled ,then add rice and veggies just let heat and pop ..you now have fried rice and since you cant use soy sauce flavor with lemon or lemon pepper add chicken if you like I do not know why I put the mix into the skillet, but I think its just in my mind the stir fry thing.
